The term cataplana refers not only to the utensil, but also to the recipes cooked in it.
Little is known about the origins of the cataplana. It is believed that its appearance in the Algarve is a result of Arab rule, due to its similarities with theMoroccan tagine, both in shape and cooking method.
The cataplana consists of two concave parts joined by a hinge and sealed with two side latches, creating an airtight environment that retains all the flavors and aromas. This unique design allows the ingredients to blend intensely and harmoniously, unlike any other kitchen utensil.
The food is cooked slowly over low heat using steam, resulting in gentle and even cooking. The result is an authentic, deep, and unmistakable flavor.
